This recipe came around as my daughter had picked ‘chocolate crunch’ for dessert at school but had the day off due to illness. She was sad she didn’t get to try chocolate crunch, so I said we’d make our own at home! And so these Chocolate Crunch quinoa bites were born.

I wanted to create a crunch that was a healthier option, paired with wanting to get more fibre into the kids diets and seeing a quinoa chocolate bar on Instagram, I decided quinoa was the crunch answer. And it turned out so good that it’s now a staple in our house.
What you’ll need:
- 83g Quinoa
- 2x 100g bars of chocolate (I use Lidls own – usually 1 milk and 1 dark)
- 45g peanut butter (you can leave this out if you’d prefer or swap with coconut oil for another healthy fats option)
I use normal quinoa but I’m sure puffed would work too if you want to give it a whirl!
Method:
- Melt your chocolate by your preferred method, microwave or on the hob
- measure your quinoa into a pan and let it ‘toast’ and mix constantly. Put it on a high heat, until it starts to go brown and ‘pops’ slightly – this gives it the crunch!
- Add the peanut butter to the melted chocolate and mix
- Once your quinoa is toasted, add it to the melted chocolate bowl and mix
- Line a small square baking tray (or whatever you have!) with baking paper and pour in your mixture.
- Leave to set in the fridge or freezer and cut into 16 squares
Give or take you’ll have squares roughly 77 calories each, almost 2g protein per bite, and almost 1g fibre! Plus they cost only 12p per square!
