Easy Budget Friendly Recipe for Banana and Chia Seed Pancakes

These pancakes are fool proof, they work every time, they’re fluffy, a hit with the kids, and they can be made without the chia seeds! 

Makes the best pancakes, every single time!!

It’s such an easy recipe that I know it by heart, no scales needed, with ingredients that are always in the house!

They came around as my eldest daughter went off bananas so I wanted to find a way to get them into her. I started making these and she loved them, eventually I realised I could add more goodness (chia seeds and flaxseeds) to make the ultimate healthy pancakes! 

A great way to get some goodness into the kids without them really knowing! 

What you’ll need:
  • 2 bananas 
  • 2 eggs
  • 1 cup plain flour (a measuring cup)
  • 1 cup milk (any milk)
  • 1-2 tbsp chia seeds
  • 1-2 tbsp flaxseeds

This recipe makes around 18 pancakes depending on your sizings! 

Your looking at around £1.16 per batch! Roughly around 7p per pancake! So a super budget friendly recipe and a great way to use up them ripe bananas and make a delicious breakfast. 

Method: 
  1. Mash bananas and mix together well with the eggs
  2. Stir in the flour
  3. Add in the milk and whisk
  4. Add in chia and flaxseeds
  5. Pre heat your pan with oil and pour the mix into small-ish sized circle pancakes
  6. Keep repeating and flipping until all your mixture is gone
  7. Serve hot (or cold) with your favourite toppings and enjoy!
